The essence of blood orange and apricot beckons alluring tropical notes of pineapple, papaya, and mango to center stage, while the Chardonnay’s fruitiness is supported and spurred by the bitterness of the Fiscallini cheese.

House made Hickory Smoked Chicken and Fuji Apple sausage
Food Pairing: The natural leather, pepper, and earthy notes of this wine evolve into hints of ripe blackberry and toasted oak when contrasted against the hickory smoked chicken base of this sausage. A blend of thyme and marjoram mirror beautifully the herbaceousness of this Cab Franc, while the addition of sweet Fuji Apple deconstructs the generous tannins found in this high elevation red wine, making for a softer and more harmonious mouth feel.

Food Pairing: This racy Rhone style Grenache becomes a tamed and softened version of it’s wild self when married with the richness of the Laura Chenel Chevre and Olive and Caper tapenade roulade. The Chevre draws strawberry and cranberry to the forefront of the palate, while the brine and acidity of the tapenade are heightened by the Grenache itself. All of these elements lend to from a beautifully balanced pairing.

Roasted New York Strip and Red Onion Jam “cigar”
Food Pairing: The blackberry, currant, and black pepper notes of this jammy Zinfandel are accentuated by the sweet red onion jam filling of this “cigar”. The New York strip’s savory mouthfeel challenges the body of this brooding old vine Zinfandel, while the Cyprus Black Lava salt elongates this wines seductive finish.
